Karaca Sanyürek, Nesrin
Abstract: Drying temperature (40–80 °C) critically influences the stability of bioactive compounds in grape seeds and their functional responses. In this study, we evaluated the vitamin and phytosterol content of Boğazkere grape seeds using high-performance liquid chromatography (HPLC) and the fatty acid content using gas chromatography (GC). Antioxidant capacity was determined using the 2,2-diphenyl-1-picrylhydrazyl (DPPH) assay and the oxidative stress marker, malondialdehyde (MDA). Temperature-dependent and compound-specific alterations were observed: while selected vitamins and phytosterols showed distinct thermal susceptibilities, fatty acid profiles exhibited measurable remodeling. Antioxidant activity revealed non-linear dose- and temperature-dependent patterns, whereas MDA consistently decreased with increasing temperature, reflecting the reduced oxidative metabolism in dehydrated tissues. Multivariate analysis, including principal component analysis (PCA) and heatmap visualization, effectively discriminated temperature treatments and revealed correlations between compositional and functional parameters. The combined use of univariate and multivariate analyses revealed that the drying temperature reshaped not only individual bioactive compounds but also the overall biochemical profile of grape seeds. These findings establish a mechanistic link between thermal processing and bioactive stability, providing a chemical basis for optimizing grape seed valorization in food systems.

Grapevine (Vitis vinifera L.) is an important fruit crop with considerable morphological and biochemical diversity, and autochthonous genotypes represent valuable genetic resources for breeding and conservation programs. Many local varieties remain underexplored in terms of pomological and antioxidant traits. Eighteen indigenous grape genotypes collected from Muş province (Eastern Anatolia, Türkiye) were evaluated using morphological and biochemical parameters, including berry traits, phenolic composition, vitamin C, and antioxidant activity. Multivariate analyses including PCA, HCA, and Pearson correlation were performed to classify genotypes and determine trait relationships. The first two PCA components explained 51.9% of the total variation. Antioxidant-related traits mainly contributed to PC1, whereas berry size and anthocyanin content influenced PC2. HCA grouped the genotypes into distinct clusters according to antioxidant capacity and pomological characteristics. Correlation analysis showed significant positive relationships among antioxidant-related parameters. Berry size traits were positively correlated with each other, but negatively associated with seed number and skin thickness. The combined use of pomological, biochemical, and multivariate analyses proved useful for genotype classification. The identification of antioxidant-rich genotypes may support future breeding and conservation studies. The results highlight the importance of indigenous grape germplasm for sustainable viticulture.

Prakash, J.; Tripathi, Dharmendra; Akkurt, Nevzat; Shedd, Tim
This article discusses the flow of a time-dependent biviscosity hybrid nanofluid boundary layer across a rotational permeable disk with effects of magnetic field and thermal radiation, and the subjective and quantitative transfer of heat flow. In the classic Von Karman issue, nanofluids comprising volume fractions ofAg-MgO/60% water and 40% ethylene glycol are considered instead of Newtonian regular fluids. The governing equations are transformed nonlinear ordinary differential equations using Von Karman transformations. The equation for the generation of entropy is calculated as a function of velocity and temperature gradient. This equation is made nondimensional by adding geometric and physical flow field-dependent parameters. The velocity profiles in the radial, tangential, and axial directions, as well as the axial pressure gradient, nanoparticle temperature distribution, local skin friction, Nusselt number, and Bejan number, are calculated by using MATLAB bvp4c. The multivariate analysis is implemented in the numerical results of the Nusselt number. A rotation parameter is generated by the spinning phenomena, which regulates the disk’s movement. Increasing the rotation of the disk causes fluid velocity to accelerate in both the radial and cross-radial directions, while contrasting phenomena can be noticed in the axial velocity of the flow. The temperature and wall shear stress of a nanofluid both rise with the disc’s Brinkman number and the volume fraction of nanoparticles. Increasing the thickness of the thermal boundary layer raises the axial pressure gradient. Entropy measured by the Bejan number Influences the magnetic field and the Biot number. Physical parameters presented in this article may be used to optimize the system’s performance. A magnetic rotating porous disk drives could be used in nuclear space propulsion engines and in heat transfer augmentation in thermal management and renewable energy sources.
