In the present study, it was aimed to investigate the exergoeconomic performance of ohmic thawing (OT) system during the thawing of frozen minced meat (lean beef). The effects of the sample shape (X: 13 × 4 × 3 cm, Y: 13 × 6 × 2 cm, Z: cylinder with a height of 13 cm and diameter of 3.91 cm), electrode surface form (titanium foil with smooth surface, titanium electrode with needle-type surface and titanium electrode with pyramid-type surface), and voltage gradients (10, 13, and 16 V/cm) were investigated. Lower exergoeconomic values were obtained for the cylindrical shape compared to the rectangular prism. The lowest exergy efficiency value (12.45 ± 0.42), is was obtained for the cylindrical shape at 10 V/cm voltage gradient with titanium foil electrode. The needle-type surface electrodes had higher performance values than other electrodes. The exergoeconomic performance increased as the voltage gradient increased. The lowest unit exergy cost (72.40 ± 2.8) was obtained for rectangular prism shape at 16 V/cm with needle-type electrode. The comprehensive exergoeconomic evaluation in this study exhibited the energy utilization effectiveness and unit exergy cost of OT.

Applicability of ohmic heating assisted vacuum evaporation for concentration of sour cherry juice

    Sabanci, Serdal; Icier, Filiz

Sour cherry juice having total soluble solids (TSS) of 19.2% was evaporated up to 65% TSS at vacuum (gauge pressure of 580 mm-Hg) by applying ohmic heating at three different voltage gradients (10–14 V/cm). Total process times were determined as 40, 55, 75, and 85 min for 14 V/cm, 12 V/cm, and 10 V/cm, and vacuum evaporation (VE), respectively. The change of moisture content during ohmic assisted vacuum evaporation and VE processes were investigated by seven different empirical models. The best fitting model was Midilli model for three different voltage gradients and VE. The electrical conductivity values at different voltage gradients varied between 0.41 and 1.13 S/m for different TSS contents. The changes of EC values were examined in detail for three different regions; heating up period, first evaporation period, and second evaporation period. EC increased until a critical % TSS content (32% TSS), then remained constant for certain time (until 45% TSS) depending on voltage gradient, and then it had tendency to decrease. Ohmic heat generation increased sharply during heating period, then decreased dramatically during evaporation periods. It is recommended that ohmic heating could be alternatively used as the heat source to shorten the process times of vacuum evaporation applied for concentration of fruit juices.

Pulsed electric fields on phenylalanine ammonia lyase activity of tomato cell culture

Gürsul, Isil; Gueven, Alper; Grohmann, Anne; Knorr, Dietrich

Pulsed electric field (PEF), among numerous stresses, provides a large potential as an external stimulus to enhance secondary metabolite biosynthesis from plant cell cultures. PEF treatment was combined with the sub-culturing technique to increase phenylalanine ammonia lyase (PAL) activity, the key enzyme for secondary metabolite synthesis from tomato cell culture. In reference to the analysis, maximum accumulation of total phenolic (TP) compounds in the cells was determined as a function of stress reaction time (SRT). Also, PEF application increased PAL activity. PEF resulted in an increase in the porosity of the cell membrane, thus decreasing cell vitality. On the other hand, SRT decreased vitality, while increasing TP content. Sub-culturing enhanced the cell structure and improved the cell membrane permeability. PEF treatment potentially offers an alternative to other methods for increasing PAL activity in plant cell cultures. (C) 2016 Elsevier Ltd. All rights reserved.

Isoflavonoid production by soy plant callus suspension culture

    Gueven, Alper; Knorr, Dietrich

Production of aglycone type isoflavonoids, Genistein and Daidzein, and p-glycosidic type isoflavonoids, Genistin and Daidzin, by the soy plant callus suspension culture was investigated in a batch system. Genistein and Daidzein concentrations increased during the exponential growth phase of the biomass. Genistin and Daidzin concentrations were not directly related with biomass production. Methyl jasmonate addition to the growth medium (0.1 kg/m(3)) was found to increase isoflavonoid biosynthesis by 5-6 times. Isoflavonoid production in the 7 days old culture increased with pulsed electric field (PEF) application at 1.6 kV, and aglycone forms were influenced to a greater extent. (C) 2010 Elsevier Ltd.
