- MakaleAçık Erişim2011Scopus SJRQ1Geometric network simulation of high porosity foods
Gueven, A.; Hicsasmaz, Z.
Solid foods are formed of a network of air cells distributed within a solid matrix. Size of air cells and how they are interconnected influence moisture sorption, thermal conductivity, aroma retention and texture of cellular foods. Available geometric pore structure models widely used in petroleum reservoir engineering, soil science, and catalysis are for low porosity (<= 0.4) materials. However, food materials generally have higher porosities (0.5-0.9). Microstructure of cookie (porosity = 0.54) and bread (porosity = 0.90) samples were simulated using the one-dimensional (1-D) corrugated pore model. Model parameters were: Unit cell dimensions; number of capillary segments, number of diameter sub-ranges, geometric placement of capillary segments in the unit cell; capillary segment length, and the seed number in random number generation. Accurate simulation of porosity depended on number of corrugated pores, and thus the number of diameter sub-ranges in the unit cell. For the cookie sample, a cubic unit cell that was able to accommodate more than a single capillary segment in a unit square and 3 diameter sub-ranges gave realistic results. Simulation of the bread crumb required a similar cubic unit cell arrangement with 12 diameter sub-ranges. (C) 2011 Elsevier Inc. All rights reserved.

- MakaleYalnız künye2011Scopus SJRQ2Toxic Elements in Animal Products and Environmental Health
Kaplan, O.; Yildirim, N. C.; Yildirim, N.; Cimen, M.
In the higher organisms, the intake of trace elements occurs mainly through the respiratory system or through the food chain. Particularly, many dangerous elements or compounds, such as metals accumulate along the food chain. In this way, the food chain becomes the main gateway for persistent toxicants to enter higher organisms. Furthermore, these toxic elements generally have an anthropogenic origin and thus their concentrations in the environment grow with the increase of urban, agricultural and industrial emissions. With increasing environmental pollution, a toxic metal exposure assessment study is necessary. Toxic elements are not metabolized at all. Some metals irreversibly are bound to body tissues, e.g., lead to bone or cadmium to kidneys. This review updates the information on carry-over of toxic substances from feed to food of animal origin (meat, organs, milk and eggs). The control of environmental contaminants that may cause residues in food of animal origin is sometimes quite difficult and expensive and is addressed with special attention in this review.

- MakaleYalnız künye2011Scopus SJRQ3EVALUATION OF ENVIRONMENTAL POLLUTION AT MUNZUR RIVER OF TUNCELI APPLYING OXIDATIVE STRESS BIOMARKERS IN CAPOETA TRUTTA (HECKEL, 1843)
Yildirim, N. C.; Benzer, F.; Danabas, D.
Aim of this study was to determine the extent of pollution in the Munzur River in Turkey was determined. The antioxidant (reduced glutathione (GSH), glutathione peroxidase (GSH-Px) catalase (CAT)) and the oxidant (MDA) status of hepatopancreas, gills, muscle, heart and kidney tissues of C. trutta were chosen as bioindicators. The fish samples were caught from contaminated (Station I) and uncontaminated (Station II) stations in Munzur River during April 2010. GSH levels were lower in gill, muscle and heart of the C. trutta collected at the contaminated station (p<0.05). The MDA levels were significantly higher in gill, muscle, kidney and heart of the C. trutta from the contaminated station (p<0.05). The CAT activity was significantly increased in the gill tissue at the contaminated station (p<0.05). GSH-Px activity was significantly decreased (p<0.05) in gill, muscle, kidney and heart tissues samples from C. trutta collected at the contaminated station compared to those collected from the uncontaminated station. Overall, the results demonstrate that alteration in the antioxidant enzymes, glutathione system and induction of lipid peroxidation reflects the presence of pollution, which may cause oxidative stress in the C. trutta from Munzur River. The results provide evidence those enzymatic and non-enzymatic biomarkers of oxidative stress.

- MakaleAçık Erişim2011Scopus SJRQ2Biochemical Taste Parameters in Meat and Sea Products
Kayim, M.; Cimen, M.; Can, E.; Kocabas, M.
Flavour of meat or sea products is generally thought to consist of the volatile components sensed in the nose, both through the nostrils and from inside the mouth. Taste results from the combination of basic flavors (sweet, sour, bitter, salt and umami). The flavors and aromas associated with meat and sea foods are generally those that develop during heating and cooking. Animal products such as meat and sea foods have very complex composition and definition of their quality are very complicated. Different food components have different tastes. Sweet flavor in meat or sea products is derived from sugars, amino acids and organic acids. Carbohydrates generally taste sweet. Fats have little taste, but contribute mouth feel and carry odorants. Lipids have an effect on flavor perception, stability and generation. In this review, it was aimed to inform basic flavor parameters of animal products such as meat and sea foods.

- MakaleYalnız künye2011Studying the relationship between employees' occupational burnout levels and satisfaction of life: A research in private banks
Cakinberk, Arzu
This study was carried out to determine whether bank employees' burnout levels and satisfaction of life differentiate significantly according to certain variables and to reveal the relationship between them. Bank employees' satisfaction of life was measured by using Satisfaction of Life Scale and their burnout levels by Maslach Burnout Inventory. The main scope of research comprised of bank employees working in cities of Sivas and Tunceli. A total of 264 bank employees participated in this research. As a result of this research, it appeared that participants' satisfaction of life levels were generally high. When the mean scores obtained by them from burnout scale were scrutinized, it was observed that sample's emotional burnout and depersonalization levels were high and the personal accomplishment levels were medium. It was concluded in the research that there was a poor relationship between burnout and satisfaction of life. In addition, certain differences were discovered in each of the three sub dimensions of burnout levels of bank employees, in terms of variables such as gender, age, marital status, education and length of service.

Yildirim, N. C.; Danabas, D.; Ergin, C.
The potential utility of biomarkers for monitoring both environmental quality and the health of organisms inhabiting polluted ecosystems has received increasing attention during the recent years. In this study. it was aimed to investigate the possible effect of pollution on biochemical parameters of Capoeta trutta captured in two environments with different levels of pollution in Munzur River, Tunceli, Turkey. One of them, hereby named reference site, there is no sewage discharge. Other side is denominated as polluted site is characterized by discharge of domestic sewage. Levels of amylase, alkaline phosphatase, lactate dehydrogenase, high-density lipoprotein cholesterol, cholesterol, albumin, total protein, direct bilirubin, total bilirubin, gamma-glutamyl tranferase, aspartate aminotransferase, alanine aminotransferase, urea, creatinine, glucose, triglycerides and uric acid were checked in blood samples. Plasma biochemical changes showed significantly differences between reference and polluted sites in alkaline phosphatase, lactate dehydrogenase, high-density lipoprotein cholesterol, cholesterol, alanine aminotransferase and glucose values. These results indicate that both domestic waste water and agricultural activities can alter the serum biochemical contents of Copeata trutta fish in Munzur River. Continuous production of pollutants resulting in impaired ability to respond to different environment stress factors and diseases. Present groups of researchers suggest that pollution levels should be monitored regularly.

Uslu, Gulsad; Gültekin, Gulden; Tanyol, Mehtap
The bioaccumulation of copper (II) and cadmium (II) ions by viable P. putida was studied as a function of initial pH, temperature, initial glucose and initial metal ion concentration. Optimum pH value for maximum metal ion accumulation was determined to be 3.0 +/- 0.5 and 4.5 +/- 0.5 at 25 and 30 degrees C for each metal ion, respectively. At a constant glucose concentration, although the increase in initial copper (II) and cadmium (II) ion concentration up to approximately 25 mg L-1 increased bioaccumulation capacity of P. putida for both, all metal ion concentrations tested inhibited the growth of P. putida. High microbial growth and copper (II) and cadmium (II) accumulation yields were found at low initial metal ion concentrations. The cell and bioaccumulated metal ion concentrations and uptake yields in-creased with increasing glucose concentration up to 10 g L-1 at a constant metal ion level for each of the metal ions. Although both metal ions caused on inhibition effect on the growth of the microorganism, P. putida was capable of removing copper (II) and cadmium (II) with maximum specific uptake of 58.42 mg g-(1) and 34.65 mg g(-1) at 25 mg L-1 initial copper(II) and cadmium(II) level, respectively. The results also indicated that, P. putida was more efficient in accumulating larger amounts of cadmium (II) than copper (II) ions.

Production of aglycone type isoflavonoids, Genistein and Daidzein, and p-glycosidic type isoflavonoids, Genistin and Daidzin, by the soy plant callus suspension culture was investigated in a batch system. Genistein and Daidzein concentrations increased during the exponential growth phase of the biomass. Genistin and Daidzin concentrations were not directly related with biomass production. Methyl jasmonate addition to the growth medium (0.1 kg/m(3)) was found to increase isoflavonoid biosynthesis by 5-6 times. Isoflavonoid production in the 7 days old culture increased with pulsed electric field (PEF) application at 1.6 kV, and aglycone forms were influenced to a greater extent. (C) 2010 Elsevier Ltd. Karimpour, M.; Harlioglu, M. M.; Aksu, O.
Iranian native crayfish includes one crayfish species, Astacus leptodactylus, with two subspecies, A. l. leptodactylus (lives in freshwater) and A. l. eichwaldi (lives in the Caspian Sea with 12 ppt salinity). Only A. leptodactylus is commonly distributed in Iranian water resources. Nearly 80 years ago local fishermen started to catch Anzali Lagoon crayfish and sold them to foreigners and embassy employees. The consumption of crayfish in Iran is very low, approximately 1 t annually. The first commercially significant crayfish harvest in Iran was 11.3 t from Anzali Lagoon in 1985. It was carried out by a Turkish company. In 1985, the introduction of A. leptodactylus was started into suitable Iranian freshwaters. For example, crayfish from Anzali Lagoon were introduced into Arass water reservoir in 1985. Today, Arass water reservoir is the main resource of crayfish in Iran. There was no further crayfish harvest in Iran until 1993. In that year, a private Iranian company began harvesting the Iranian crayfish and exporting them to European countries. In 1993, 3.2 t of crayfish were exported from Iran. Although there have been fluctuations between years, the export of crayfish in Iran increased remarkably after 1996. The successful results of crayfish introductions gave rise to this increase. In 2003, the export of A. leptodactylus from Iran reached the maximum level (216 t). The commercial value of exported crayfish between 2000 and 2009 varied from 1.5-2.5 million US$ annually and its amount was 106-211.5 t. However, there was a reduction in the export of A. leptodactylus from Iran after 2003, to just above 100 t. In conclusion, in order to increase crayfish production in Iran, introduction of A. leptodactylus into suitable water resources, and management, conservation and monitoring of present crayfish populations should be carried out.

Staphylococcal food poisoning is one of the most prevalent causes of gastroenteritis throughout the world. This study has three steps. In the first step of the study, different food matrices were analyzed for the presence of Staphylococcus aureus. In the second step, types of staphylococcal enterotoxins (SET) from these foods were analyzed. Lastly, antibiotic resistance of S. aureus isolated was determined using conventional and PCR methods. For this purpose, 300 different food samples were evaluated for contamination with S. aureus. From these samples 221 S. aureus strains were isolated. The same strains were evaluated for antibiotic resistance and existence of mecA gene. All strains were at least resistant to 2 antibiotics, but no MRSA strain was detected. Staphylococcal Enterotoxins (SE) were determined with VIDAS and ELISA from the foods of concern. The results of the analysis held with Vidas SET2 showed 72 (24%) of 300 samples and with ELISA these enterotoxins showed difference in distribution.

This study aimed to determine the existence and distribution of certain neuropeptides in endocrine and exocrine pancreas of the long-legged buzzard by using immunohistochemical methods. SOM-14-, NPY- and CGRP-IR endocrine cells were determined in both central and peripheral regions in A-islets within the pancreas, while SP-IR endocrine cells were found only in the central region, and CCK-8- and galanin-IR endocrine cells were only detected in peripheral region. On the other hand, in B-islets; SP-, NPY- and CGRP-IR endocrine cells were determined in both central and peripheral regions, while SOM-14- CCK-8- and galanin-IR endocrine cells were found only in the peripheral region. In addition; SOM-14-, NPY-, CGRP-. CCK-8- and galanin-IR cells were also observed in exocrine pancreas. This distribution pattern in the pancreas of the long-legged buzzard demonstrates that neuropeptides perform their probable affects through endocrine and/or paracrine mechanisms. In conclusion, the existence and distribution of neuropeptides in the pancreas of long-legged buzzard have been introduced in this study for the first time and this bird species has also been found to differ from other types of avian species.
