Biochemical Flavour Parameters of Milk in Early Lactation

    Bayril, T.; Cimen, M.; Tekelioglu, O.

This research was aimed to investigate the biochemical flavour-parameters of milk by machine milking in early lactation period. In the experiment, milk samples from 50 Holstein cows were used. Cows were fed high-energy concentrate diet (140 g crude protein and 10.3 metabolizable energy MJ/d). The data was collected from DIMES Company during July month. The milk fat rates were lower (p < 0.05) for cows in first and second weeks than last week. Cows were shown to be more sensitive to milk fat syndrome for first and second weeks. A decrease in milk fat percentage for summer period (2.3-2.6 %) can directly lead to taste loss. There were statistically no significant differences between the weeks for milk acidity (sH and pH) values during July. The milk acidity values (sH and pH) during July were tolerable for desired taste and favourable for consumer preference.

The Effects of Different Feeds under the Same Salinity Conditions on the Growth and Survival Rate of Artemia

Kayim, Murathan; Ates, Mehmet; Elekon, Hasan Alper

This study reports effects of 4 different feeds under same salinity conditions on feeding of anemia in terms of growth and survival rate. The feeds comprised of four groups (Group A: -16% Selco + 80% Headstart + 4% Molasses mixture feed; Group B: -85% Chlorella + 15% Molasses mixture feed; Group C: 50% Chlorella + 50% Headstart mixture feed and Group D: -100% Chlorella feed). Through stabilizing temperature, oxygen, pH and salinity values as general water parameters and replacing 10% sea water from the tank on daily basis, the survival rate and the growth in length of the anemia were analysed as well as the changes in nitrite content in the water. The results showed that the highest increase of 1400 mu in anemia with average pre-test length of 450 mu was observed on feed C. The highest rate of 58.33% survival was recorded on feed D. Similarly, the highest nitrite of 1.50 mg L-1 was measured in trial tank containing artemia fed on feed A and least nitrite generation of 0.45 mg L-1 was noted in trial tank containing anemia fed on feed C.

SEASONAL VARIATIONS OF BIOCHEMICAL TASTE PARAMETERS IN MILKS FROM CONVENTIONAL AND ENVIRONMENT - FRIENDLY ORGANIC FARMING

    Cimen, M.; Yildirim, N.; Dikici, A.; Kaplan, O.; Yildirim, N. Cikcikoglu

CIMEN, M., N. YILDIRIM, A. DIKICI, O. KAPLAN and N. CIKCIKOGLU YILDIRIM, 2010. Seasonal variations of biochemical taste parameters in milks from conventional and environment-friendly organic farming. Bulg. J. Agric. Sci., 16: 728-732 The aim of this study is to research the milk biochemical taste components in organic (ORG) and conventional (CON) systems for different season. In study, all data were investigated for all season of 2004. Milk fat levels in both groups for summer season were lower than any other season. Average milk fat values in ORG treatment were lower than the values of CON treatment in all season except winter period. Therefore, a decrease in fat percentage for organic milk can directly lead to taste loss. Similarly, total solid rates in conventional milks in spring period were more favorable than rates in organic milk for desired taste. However, the pH value in organic milk was more acceptable for required flavor in summer season.

INFLUENCE OF CURING CONDITIONS AND AGGREGATE TYPE ON MECHANICAL PROPERTIES OF SELF COMPACTING LIGHTWEIGHT CONCRETE

    Gönen, Tahir; Yazicioglu, Salih

Lightweight concrete has important advantages, especially in terms of earthquakes. Besides, the production of lightweight concrete with lightweight aggregate is a problem, because workability of lightweight concrete is difficult. If self compaction property can be added to the lightweight concrete, this negativity can be removed. In this study, mechanical properties of self compacting lightweight concrete (SCLWC) containing expanded perlite and pumice aggregates were investigated. Moreover, mechanical properties of self compacting (SCC) and lightweight (LC) concrete were investigated by being compared with SCLWC. Powder phase of self compacting lightweight concrete was consisted of CEM I 42.5 N cement type and C class fly ash. Pumice and expanded perlite aggregates were used in aggregate phase. Compressive strength and flexural tensile strength at 7, 28 and 90 days were determined on specimens were cured in water and air at the same ages. Obtained test results showed that SCLWC of 50 MPa compressive strength at 28 days can be produced by the use of lightweight aggregate and this concrete was not effect to curing condition as much as conventional concrete.

Agar-Plate Screening for Acid Dyes Decolourization by Three Strains of Pleurotus eryngii Isolated from Tunceli, Elazig and Hakkari Province of Turkey

    Yildirim, N.; Yildiz, A.; Aydin, H.

Many synthetic dyes present in industrial wastewaters are resistant to degradation by conventional treatments. In this study, the ability to decolourize two textile dyes by Pleurotus eryngii strains collected from geographically different habitats of Turkey was evaluated on agar plates For all strains, growth and decolourization halos were determined on malt extract agar plates containing 0 1 and 0.2 g/L of acid red 183 or acid green 25. Each P eryngii strain showed certain decolourization capacities and was able to decolourize both acid red 183 and acid green 25 on the malt extract agar plates, but not to the same extent Both dyes at all concentrations were found to be toxic for P eryngii growth The presence of the dyes in plates reduced the mycelial growth of all strains in comparison with the control culture growing in the medium without dyes. A positive correlation was found between the mycelial growth rate and the decolourization ability

Biochemical Taste Parameters in Meat and Sea Products

    Kayim, M.; Cimen, M.; Can, E.; Kizak, V.

Flavour of meat or sea products is generally thought to consist of the volatile components sense in the nose, both through the nostrils and from inside the mouth. Taste results from the combination of basic flavors (sweet, sour, bitter, salt and umami). The flavors and aromas associated with meat and sea foods are generally those that develop during heating and cooking. Animal products such as meat and sea foods have very complex composition and definition of their quality are very complicated.

Milk Components from Machine Milking Cows in Winter and Spring Periods

    Tekelioglu, O.; Cimen, M.; Soylu, D.; Soylu, I.

The aim of this study is to research the biochemical components in milks of machine milked cows for spring and winter season in different regions of Turkey. In study, all data were investigated for winter (December, January and February) and spring (March, April and May) periods in 2006. The milk fat levels were the highest in the winter season in Kayseri, Malya, Sahilkoy, Turhal and Pazar regions. The milk total solid levels were the lowest in the spring season for Kayseri Province. The milk sH values were the lower in the spring than winter season in Malya region. Whereas, there were no significant differences among regions for pH values in different periods. Low fat levels in total milk for spring period can cause to economical loss since the milk price depends on milk fat levels. Further studies are needed to investigate on milk components in different climatic conditions.

The Biochemical Parameters Having Economic Importance in Sheep and Fish Meats

    Kayim, M.

In this study, 10 meat samples from fish (Trachurus trachurus L. 1758) and sheep (Akkaraman) were used. In the experiment, the used fish meat was a total body meat. However, the sheep longissimus muscle (lean) from 6th rib cut was sampled for determination of chemical components. The concentrations of total fat were lower (p < 0.01) for fish than sheep. However, the concentrations of pH were also lower (p < 0.05) for sheep material. There were no effects of animal species on the moisture concentrations. The rates of ash were lower (p < 0.01) for sheep group. The pH concentrations close to neutral in meat from fish may be advantage for eating quality. However, this pH level is disadvantage for shelf life of product. However, the high amounts of fat in the sheep meats may have a negative effect upon consumer's preference and health.

Presence of E. coli O157:H7 in Cakes Marketed in Elazig

Öksüztepe, Gulsum; Patir, Bahri; Çalicioglu, Mehmet; Ilhak, O. Irgan; Dikici, Abdullah

The present study was undertaken to investigate the presence of Escherichia coli O157:H7 in cakes (plain, with cacao, with fruit) marketed in Elazig. A total of 200 cake samples as 100 plain, 50 with cacao, and 50 with fruit were analysed. Following the enrichment, the samples were plated on to CT-SMAC agar. A total of 208 typical colonies (colourless) as 138 colonies from 65 plain cakes, 25 colonies from 8 cakes with cacao, and 45 colonies from 19 cakes with fruit were isolated. These colonies were subjected to further analysis given in the materials and methods section for identification of serotype O157:H7 of E. coli. However, no colonies representing E. coli O157 were detected in any of the samples. Therefore, analysis was not proceeded for determining H7 in any of the isolates. E. coli O157:H7 was not detected in any of the cake samples analyzed. Although this finding is a good news for public health, considering other pathogens, which may exist in cakes, it is concluded and reemphasized that strict hygienic practices should be applied at every stage of cake production.

Effects of cypermethrin on antioxidant status, oxidative stress biomarkers, behavior, and mortality in the freshwater mussel Unio elongatulus eucirrus

Köprücü, Kenan; Yonar, Serpil Mise; Seker, Engin

In this study, the effects of cypermethrin on antioxidant status, oxidative stress biomarkers, behavior, and mortality in the freshwater mussel Unto elongatulus eucirrus were examined. Cypermethrin was applied at concentrations of 5, 10, 20, 40, 80, and 160 mu g/L, for 1, 24, 48, 72, and 96 h. With increasing cypermethrin concentrations, the mussels showed significantly (P < 0.05) increased lipid peroxidation (MDA), which might be associated with decreased levels of reduced glutathione (GSH) and catalase (CAT) activity in the digestive glands and gills of the mussels. Negative correlations were observed between the MDA and the GSH and CAT levels after cypermethrin exposure, indicating a protective role of GSH and CAT against lipid peroxidation, and suggesting the use of these antioxidants as a potential biomarker of toxicity associated with contaminant exposure in freshwater mussels. In addition, at 5 mu g/L, cypermethrin had no effect on the duration of the active and rest periods. All higher concentrations caused inhibition of the filtration activity by reducing the active periods and lengthening the rest periods. The active periods shortened as the cypermethrin concentrations increased, the reduction being 90% of the control at 160 mu g/L. Rest periods were longest (237% longer than the control) at 160 mu g/L. The 48, 72, and 96 h LC50 values of cypermethrin for mussels were determined as 96.50, 77.96, and 59.20 mu g/L, respectively (P < 0.05). The results indicate that the insecticide cypermethrin has a harmful effect not only on nontarget aquatic arthropods and fish, but also on mollusks, although the sensitivity of mussels is less than that of fish. Being a general toxicant for aquatic life, cypermethrin should be used with great caution in agriculture to protect natural waters from contamination.

The Nature of the Crustal Structure of the Eastern Anatolian Plateau, Turkey

Yilmaz, Ali; Yilmaz, Huseyin; Kaya, Cemal; Boztug, Durmus

The Eastern Anatolian Plateau (EAP) of Turkey, with an elevation ranging from 1700 to 2000 m, is located between the Eastern Pontide Arc to the north and the Arabian Platform to the south. In this region, pre-Maastrichtian tectonic units representing the crust crop out in only a few localities. As they are covered by Maastrichtian-Quaternary rock units, it is difficult to study the nature and mutual relationships of these pre-Maastrichtian tectonic units. The palaeotectonic units of the EAP comprise two different levels in the present study: (1) The lower level consists of platform-type carbonates and their metamorphic equivalents. These units may represent the Taurus Platform and its metamorphic equivalents. (2) The upper level consists of an ophiolitic-melange prism which is made up mainly of oceanic crust; the prism comprises a complex of ophiolite, ophiolitic melange, and fore-arc deposits. This upper unit represents a subduction-accretion prism and may have originated partly from the North Anatolian Suture to the north, and partly from the South-eastern Anatolian Suture to the south. Continental crustal rocks were thrust over by the ophiolitic melange prism; thus outcrops of them are scarce in the region as they are exposed in tectonic windows through the ophiolitic thrust sheets. The pre-Maastrichtian tectonic units of the EAP are blanketed by Maastrichtian to Quaternary volcanic and sedimentary rock units; these sequences include successive transgressive and regressive intervals and overlie the palaeotectonic units along a pronounced unconformity. Olistostromal units are abundant in the Eocene sedimentary units and were derived from the ophiolites and ophiolitic melange. The Maastrichtian-Quaternary cover is made up of collisional and post-collisional deposits across the whole region. Although the EAP has been experiencing considerable N-S compression, it has not been affected by significant crustal thickening because of the strike-slip tectonic regime that is dominant in the region. Bioconversion Efficiencies of Lignocellulosic Soy Stalk by Pleurotus eryngii Strains

    Yildirim, Numan; Yildiz, Abdunnasir

The bioconversion of soy stalk (SS) lignocellulose by three different starins of Pleurotus eryngii from various origins by solid state fermentation was studied during 40 days. The effect of rice bran ratio, 5% or 10% (w/w), on lignin degradation and laccase activity were measured througout the fermentations while, total crude protein and C/N ratio of the remaining substrate were determined at the end of the fermentations. The degradation of lignocellulose was found by the determination of acid soluble lignin (Klason lignin) content. All the strains degraded lignin with different extents. The amount of lignin degradation was decreased by the addition of the higher quantities of rice bran (SS+10% RB). The highest lignin degradation was obtained as 24.43% by P eryngii var. ferulae (E) and the highest protein level was found to be %13.32 by P eryngii (H). We determined that the laccase activity was generally decreased by the addition of the higher quantities of rice bran (10%). Maximum laccase activity (204.39 U/L) was obtained by P. eryngii (E) on SS + 5% RB at the end of the fermentation. This study showed that, after fungal treatment soy stalk can be used as a feed for ruminants with its higher feeding value.
