The objective of the present study was to obtain data about cooking time and temperature of kiymali pide in the restaurants and to investigate thermal inactivation of E. coli O157:H7 during experimental kiymali pide making. A field study was conducted in randomly selected 23 of 87 pide restaurants. Processing parameters including oven temperature, cooking period and post-cooking temperature were determined. Kiymali pide samples were prepared using ground beef filling experimentally inoculated with E. coli O157:H7 (7.6 log(10) CFU/g). Pide samples were cooked at a conventional oven at 180 degrees C for 180, 240, 270, 300 and 330 s. Results of the current study suggest that cooking kiymali pide at 180 degrees C for at least 330 s (5.5 min) may provide sufficient food safety assurance (>= 6 log(10) CFU/g) for E. coli O157:H7. Dikici, Abdullah; Ilhak, Osman Irfan; Çalicioglu, Mehmet
This study was undertaken to evaluate the effects of some essential oil compounds for the inactivation of Listeria monocytogenes and Escherichia coli O157:H7 in cig kofte. In experiment 1, a cig kofte batch was inoculated with high levels of E. coli O157: H7 or L. monocytogenes (7.00 log(10) cfu/g) and the batches were divided into 6 groups. Each group was treated with 18 mL/kg of normal saline, cineole, limonene, carvone, linalool, or eugenol. Treatment with carvone, linalool, and eugenol resulted in a significant (P < 0.05) decrease in the numbers of both pathogens. In experiment 2, the cig kofte was inoculated with the same pathogens and each group was treated with 0 (control), 20, 22.5, and 25 mL/kg of eugenol. Increases in concentration did not cause a difference in pathogen reduction. The results showed that eugenol, carvone, and linalool can be used for the inactivation of E. coli O157: H7 and L. monocytogenes in cig kofte or similar foods.

Batu, Ali; Sen, Levent
Undamaged potato tubers (cv. 'Marfona') grown in Tokat, Turkey, were used in this study. The tubers were cured for two weeks at 15 degrees C and 75-85% relative humidity. The tubers were sorted for size, shape and physical damage and were divided into two groups. One group was left unwrapped and the other was placed on polystyrene trays and heat-sealed in 30, 40 or 60 mu m low density polyethylene (LDPE) film or 38 mu m c-polypropylene (CPP) film. The samples were kept in temperature-controlled rooms at 5 +/- 1 degrees C and 75-85% RH for eight months. Samples were taken every month during storage, and the internal colour, ascorbic acid, titratable acidity, pH and total soluble solids were determined. Results indicate that the harvesting time and storage period significantly affected quality parameters. The highest increases in total soluble solids, minimum change in pH, lowest titratable acidity and ascorbic acid values were found in tubers in 38 mu m CPP harvested on July 25th. The lowest pH and ascorbic acids were found in the 40 mu m LDPE packaged tubers, while maximum titratable acidity was found in the unwrapped tubers harvested on 20th September. The L* values indicate that the internal lightness of the tubers generally decreased during the storage period, indicating that they became a bit darker during storage.

The objective of this study was to determine the effects of different feeding protocols on compensatory growth, feeding rate, and feed conversion efficiency of Black Sea Trout Salmo trutta labrax. To our knowledge, no previous feeding experiments with Black Sea Trout have incorporated a fasting period to simulate the handling and acclimation conditions experienced by farmed fish. Fifteen fish per tank (10.69 +/- 0.06cm and 13.22 +/- 0.14g, mean +/- SE) were stocked into 40-L fiberglass tanks. Fish were fed with different fasting-feeding regimes for 95 d and were equally allotted to four treatments (T-cont: control; T5-10: 5 d fasting, 10days feeding; T10-10: 10 d fasting, 10 d feeding; and T15-10: 15 d fasting, 10 d feeding) with three replicates per treatment. The results indicated that length (P = 0.0005), weight (P = 0.000), condition factor (P = 0.013), and specific growth rate (P = 0.014) were significantly affected by the interaction between feeding and time. All fasting treatments showed partial compensation during refeeding. There was an increase in daily feeding rate and feed conversion efficiency in fasting treatments compared with the control treatment. In contrast, at the end of the experiment specific growth rate, condition factor, and body weight in fasting treatments were significantly lower compared with the control treatment. We concluded that there was partial compensation of growth with regular refeeding after periods of feed deprivation (e.g., 5, 10, or 15 d) over a long term and a shorter fasting period may be preferred in order to achieve compensatory growth. - MakaleAçık Erişim2013Scopus SJRQ3Effect of Fly Ash and Silica Fume on compressive strength, sorptivity and carbonation of SCC
Turk, Kazim; Karatas, Mehmet; Gonen, Tahir
In this paper, ASTM C 618 Class F Fly Ash (FA) at 25%, 30%, 35% and 40% and Silica Fume (SF) at 5%, 10%, 15% and 20% replacement of Portland Cement (PC) CEM I 42.5 in SCC was used to evaluate the effect of types and quantity of powder additions on compressive strength and permeations properties of SCC. To this end, eight types of SCC were designed, in comparison with Vibrated Traditional Concrete (VTC). The results indicated that SCC specimens with SF15 had the highest compressive strength with 73.87 MPa for 130 days. The sorptivity values of SCC specimens with FA and SF were lower than those of VTC specimens regardless of type and quantity of powder additions. On the other hand, the carbonation resistance of VTC was higher than that of SCC specimens containing both SF and FA for all accelerated carbonation periods. Consequently, it can be said that type and quantity of powder additions had an important effect on the correlation among the compressive strength and permeation properties of SCC.

Ates, Mehmet; Demir, Veysel; Adiguzel, Ragip; Arslan, Zikri
The increased use of nanosized materials is likely to result in the release of these particles into the environment. It is, however, unclear if these materials are harmful to aquatic animals. In this study, the sublethal effects of exposure of low and high concentrations of titanium dioxide nanoparticles (TiO2 NPs) on goldfish (Carassius auratus) were investigated. Accumulation of TiO2 NPs increased from 42.71 to 110.68 ppb in the intestine and from 4.10 to 9.86 ppb in the gills of the goldfish with increasing exposure dose from 10 to 100mg/L TiO2 NPs. No significant accumulation in the muscle and brain of the fish was detected. Malondialdehyde as a biomarker of lipid oxidation was detected in the liver of the goldfish. Moreover, TiO2 NPs exposure inhibited growth of the goldfish. Although there was an increase (8.1%) in the body weights of the goldfish for the control group, in the low and high exposure groups 1.8% increase and 19.7% decrease were measured, respectively. The results of this study contribute to the current understanding of the potential ecotoxicological effects of nanoparticles and highlight the importance of characterization of NPs in understanding their behavior, uptake, and effects in aquatic systems and in fish.

Kizak, V.; Ozden, O.; Guner, Yusuf
In this study, rainbow trout (Oncorhynchus mykiss) (162.7 +/- 3.03 g) and brown trout (Salmo trutta forma fario) (160.9 +/- 2.94 g) were transferred to full-strength seawater (36.5 gl(-1)) for directly and gradually (21 days), then changes in gill Na+-K+-ATPase activity and size of chloride cells associated with environmental salinity were investigated and also survival of trouts were evaluated in seawater. All fish died when brown trouts were transferred into seawater directly but rainbow trouts survived 50 - 58.3 %. However, significant difference was recorded between brown and rainbow trouts in terms of survival rates by gradual acclimation. Survival of brown trout and rainbow trout that were transferred in seawater gradually, was 66.7 - 75 % and 83.3 - 91.7 %, respectively (p < 0.05). Gill chloride cell sizes in both species increased at 36.5 gl(-1) salinity. The lowest sectional area of chloride cells was determined at the point of death in brown trouts which were transferred directly. Following direct transfer to seawater, the largest sectional area of chloride cells were determined in rainbow trout. There are significant differences between acclimated and non-acclimated fish in terms of chloride cell sizes and Na+-K+-ATPase activities (p < 0.05). The highest gill Na+-K+-ATPase activity was in brown trouts which were transferred gradually, while the lowest activity was detected in freshwater phase. According to the results, gradually acclimated trouts can perform better adaptation than their directly acclimated counterparts.

- MakaleAçık Erişim2013Scopus SJRQ4Column Studies on Effect of Phosphate Immobilization on Removal of Metals from Stormwater Runoff in Bioretention Cell
Demir, V.; Bin-Shafique, S.
Batch studies indicated that low cost native materials such as loam soil, juniper mulch, hardwood mulch, pine mulch and sawdust performed efficiently as media in bioretention cell for removal of copper and lead from stormwater runoff. Juniper mulch performed best in batch studies was used in column studies. Column studies suggested that the presence of phosphate has a pronounced effect on metal immobilization. This is due to the formation of metal phosphates that have extremely low solubility. The remaining metals were adsorbed on bioretention media of the bioretention cell. Breakthrough adsorption and desorption curves for lead and copper were measured in presence and absence of phosphate immobilization. Copper reached a breakthrough curve in around 20 days and lead in 30 days. Column studies showed that in all samples addition of phosphate also decreased the leaching of lead and copper back to aqueous solution consistent with lead and copper immobilization.

Kizak, Volkan; Güner, Yusuf; Türel, Murat; Kayim, Murathan
The aim of this study was to compare growth, gonadal structure and red blood cell sizes of triploid and diploid brown trout (Salmo trutta fario). Triploidy was induced by providing a heat shock treatment to the fertilized eggs. From the 18th month post-fertilization triploid (TBT) and control diploid (CBT) brown trout groups were investigated up to 32nd month. Survival, specific growth rate, feed conversion ratio, condition factor, relative growth rate, absolute growth rate, gonadosomatic index, hepatosomatic index and carcass yield were determined in both groups. It has been determined that the triploid fish showed greater live weight than diploid fish despite the difference was not significant (P>0.05). In triploid group triploidisation success was obtained as 95% and male/female ratio was found as 44.4-55.6%. The red blood cells were significantly larger in triploids than diploid ones (P<0.05). Regarding histological section of gonads, triploidy resulted in reduced gonadal development in female, while triploid males seem to exhibit normal gonadal development. Our results suggest that since triploid females could grow more than males, the growth performance studies on triploid brown trout should be performed with all-female stocks under fish farming practices especially for the production of large size trout.

Levels of nickel and chromium in leaves of 14 plant species grown in industrial sites of Gaziantep and surrounding were examined for biomonitoring of atmospheric pollution using flame atomic absorption spectrophotometry (FAAS). The plant leaf samples were collected from different locations with different degrees of metal pollution. The metal levels in the plants were in the ranges of (with mean values) 0.4-28.0 (3.1) mg kg(-1) for Ni and 0.1-6.6 (1.5) mg kg(-1) for Cr. On the other hand, the Ni and Cr levels in the plant leaf samples collected from control) areas were in the ranges of 0.4-2.1 (1.1) and 0.1-1.4 (0.58) mg kg(-1), respectively. It was concluded that Pinus nigra L., Acacia robinia L., Platanus orientalis L., Nerium oleander L., Pyracantha coccinea M.Roem. and Populus nigra L. for Ni, Pinus nigra L., Acacia robinia L., Olea europaea L. and Nerium oleander L. for Cr could be biomonitors. Therefore, it was demonstrated that the plant leaves could be used for heavy metal air pollution monitoring in urban and industrial regions.

Akkus, Sukran; Bal, Tulin; Karaaslan, Nagihan M.; Yaman, Emre; Kilinc, Ersin; Yaman, Mehmet
Five-step sequential extractions were employed to fractionation of Ni, Cr and Cu in soil polluted by anthropogenic activities and determine the mobility of the metals. Twelve samples were collected on an agricultural area that was located near an airport and intercity roads in Elazig-Turkey. Exchangeable, organically bounded, carbonate bounded, adsorbed species on Fe and Mn oxides and residual species (except silicates) of Ni, Cr and Cu were extracted into solution by using CaCl2, Na4P2O7, Na(2)EDTA, NH2OH-HCl and HNO3-H2O2, respectively. Mobile metal concentrations in fractions and total recoverable in soils were determined by using inductively coupled plasma-optical emission spectrometry (ICP-OES). Total recoverable Ni, Cr and Cu concentrations were in the range of 40-119, 45-126 and 23-72mgkg(-1), respectively. It was observed that total concentrations of metals in some of the samples were higher than the permitted values. The sum of the mobile percentages of metals was found to be lower than 50%. The Ni, Cr and Cu percentages for exchangeable species are in the ranges of 0.18-1.64, 0.03-0.59 and 0.42-2.53%, respectively.

Korkmaz, S. Aslan; Karadag, A.; Korkmaz, N.; Andaç, O.; Gürbüz, N.; Özdemir, I.; Topkaya, R.
Five cyanide complexes, [Ni(N-bishydeten)Pd(CN)(4)] (1), [Cu(N-bishydeten)Pd(-CN)(2)(CN)(2)](n) (2), [Cu(N-bishydeten)(2)][Pd(CN)(4)] (3), [Zn(N-bishydeten)Pd(CN)(4)] (4), and [Cd(N-bishydeten)(2)][Pd(CN)(4)] (5) (N-bishydeten = N,N-bis(2-hydroxyethyl)-ethylenediamine), have been synthesized and characterized using various techniques. Different structures were formed when the M:L ratio was varied in copper complexes. The single-crystal X-ray diffraction analysis reveals that 2, a 1-D cyanide-bridged complex with 2,2-CT-type zigzag chain, was obtained by using 1:1M:L ratio whereas 3 was formed as a complex salt in a molar ratio of 1:2. The thermal stabilities determined from DTG(max) values of the first decomposition stages change in the order 1>5>4>3>2. Although an EPR signal was not observed for 1, the g parameters obtained from the EPR spectra of 2 and 3 indicate that Cu-II ions are located in tetragonally distorted octahedral sites (D-4h), and the ground state of the unpaired electron is (B-2(1g)). The magnetic behavior indicates a very small antiferromagnetic interaction below 10K for 1-3. In 3, there is a temperature-independent paramagnetism () due to the orbital moments of the d electrons. 1-3 were tested as catalysts in Suzuki and Heck coupling reactions.

Seasonal variations of proximate composition and fatty acid profiles of wild brown trout (Salmo trutta macrostigma Dumeril, 1858) caught from the Munzur River, Tunceli-Turkey were investigated in this study. It was determined that wild brown trout was high in mono-unsaturated, poly-unsaturated and saturated fatty acids, respectively. C18:1 omega-9 (oleic acid) was the most abundant fatty acid in all seasons ranging from 20.27 to 29.35 %. C22:6 omega-3 (docosahexaenoic acid-DHA), C18:3 omega-3c (cis-linolenic acid), C18:2 omega-6c (linoleic acid), and C20:5 omega-3 (eicosapentaenoic acid-EPA) were found to be predominant fatty acids in PUFAs. As a conclusion, wild brown trout living in Munzur river could be considered as an important protein and omega-3 fatty acid source according to the nutritional quality results evaluated in terms of proximate and fatty acid composition.
