- MakaleAçık Erişim2020Determination of Microbiological Quality of Fermented Sausage Samples by Fuzzy Logic Approach
Ertekin, Özlem; Kaya, Sema Kayapinar
Mathematical methods may be useful in cases with certainty by using numerical data, but may be insufficient in cases of uncertainty. One of the uncertainties is the quality assessment in the food industry. In this case, one of the methods that can be used is fuzzy logic method. In this study, a fuzzy logic based decision support system was designed for the classification of sausage samples into quality classes. The inputs of the system are Micrococcus/Staphylococcus, Lactobacillus, Yeast-mold count values of fermented sausage samples. The output of the fuzzy system was sausage quality assessment. In order to determine the success of the experimental study, a comparison was made with expert decisions and the system was found to be successful at 85%. The system was modeled using Matlab R2016a package program.
- MakaleAçık Erişim2020Description of the Protective Feature of Oregano Essential Oil Sold as a Commercial Site on Rainbow Trout
Kirbag, Sevda; Kuzgun, Nermin Karaton
The essential oil extracted from plants has a shelf-life effect. This study was carried out to determine the difference of natural oregano essential oil, which is considered to be a potential food additive, from commercially available, and its effects on rainbow trout containment by using low amounts of this essential oil. The changes in rainbow trout samples were analyzed by applying commercially available oregano essential oil at a low rate (RT1: 1% and RT2: 2%), by looking at the following parameters. When the microbial load, sensory properties, pH, TVB, TBA numbers are examined in terms of thyme essential oil application and day relationship, the limit to be consumed in samples with 1% oregano essential oil is (RT1), on average, between the 3rd and the 6th days. It is between the 3rd and 9th days in the samples applied with 2% oregano essential oil (RT2). According to the microbial load results, the rainbow trout sample (RT: control) exceeded the consumable limit on day 6 th and showed the highest value (P <0.05). In addition, it has been proven with the TVB and TBA values that the samples applied with essential oil are of good quality. In a sense, the shelf life is stabilized thanks to the oregano essential oil. The preservative effect was greater as soon as the oregano essential oil concentration was greate.

İncele - MakaleAçık Erişim2020Scopus SJRQ3Modeling of Drying Processes of Dates (Phoenix, Arecaceae) with Oven or TGA and Microbiological Properties of Fresh and Dried Dates
Ertekin, Özlem; İpek, Yeliz
Drying method, which is one of the oldest preservation methods, is important for preserving fruits. Date palm fruit is an important food in human nutrition due to some vitamins, minerals, sugar, phenolic components, and high fiber content. In the literature, date palm drying was not studied sufficiently in the aspect of mathematical modeling and the effect of drying process on the microbiological properties. In this novel study, date palm drying process was applied with four different temperatures of 50°C, 70°C, 90°C, and 110°C with two different drying techniques; drying with oven and drying with thermogravimetric analysis (TGA). Chemical changes in the date palm structure after drying at different temperatures were investigated with FTIR analysis. Fibrous structure of palm fruit is also exhibited with SEM analysis. On the other hand, microbiological studies were applied both for fresh and dried date palm to observe the drying process effect on the growth of different types of microorganisms. Consequently, drying time decreased with increasing drying temperature while the color of the dried date palm fruit became darker with increasing temperature. However, the chemical structure was not affected. Drying time of oven drying technique was longer than drying with TGA technique. The mathematical model of the drying temperature depending on drying time is calculated as (Formula presented.) for TG-DTA drying experiments and (Formula presented.) for drying process with oven. In addition, the microbiological load has significantly decreased or disappeared with the drying process.

Trichlorfon (TCF) is an antiparasitic agent used in aquaculture to treat external parasites and it belongs to the chemical class of organophosphates. This study was conducted to investigate the ameliorating effects of lycopene on TCF-induced toxicity in carp by evaluating haematological parameters and oxidant/antioxidant status. Fish were randomly divided into seven experimental groups. These groups were arranged as follows: control (no treatment) group, corn oil group, lycopene (10 mg kg−1) group, TCF-I (11 mg L−1) group, TCF-I (11 mg L−1) plus lycopene (10 mg kg−1) group, TCF-II (22 mg L−1) group and TCF-II (22 mg L−1) plus lycopene (10 mg kg−1) group. At the end of 14 days administration, blood and tissue (liver, kidney, and gill) samples were collected. Haematological changes [red blood cell (RBC) and white blood cell (WBC) count, haemoglobin (Hb) concentration, haematocrit (Ht) level, and erythrocyte indices: mean corpuscular volume (MCV), mean corpuscular haemoglobin (MCH), and mean corpuscular haemoglobin concentration (MCHC)] were determined in the blood samples, while antioxidant parameters [(malondialdehyde (MDA) and reduced glutathione (GSH) levels and superoxide dismutase (SOD), catalase (CAT), and glutathione peroxidase (GSH-Px) activities] were evaluated in the liver, kidney and gill samples. The results demonstrated that all the haematological parameters were significantly decreased in the TCF-I and TCF-II groups when compared to the control group. Notable increases in the tissue MDA levels were observed in the TCF-treated groups. In contrast, significant decreases were observed in the tissue SOD, CAT and GSH-Px activities and GSH levels in the TCF-I and TCF-II groups. However, simultaneous treatment with lycopene provided a marked normalisation of the haematological and oxidant/antioxidant parameters compared with the TCF-I and TCF-II groups. The findings show that dietary lycopene supplementation might be helpful in abrogation of TCF toxicity by changing haematological conditions and antioxidant status in fish.

Sabanci, Serdal; Icier, Filiz
Sour cherry juice was concentrated to 65% TSS content by using ohmic heating assisted vacuum evaporation (OVE) at voltage gradients (10, 12, 14 V/cm) and vacuum evaporation (VE). The change of performance efficiencies (energy/exergy) of OVE process depending on the voltage gradient applied and the increase in TSS content during the process were investigated by taking into account of both process and system boundaries, and compared with those of VE process. During this process, total energy consumption decreased as the voltage gradient increased, but it increased as TSS content increased. System boundary based efficiencies were lower than process based ones. Maximum efficiency was obtained for 14 V/cm. Improvement potential values increased as TSS content increased but the voltage gradient increased. The assistance of ohmic heating to VE increased the performance of the evaporation process in terms of energy and exergy efficiencies, and decreased the improvement requirements of the system.

In the present study, the effectiveness of ohmic thawing (OT) on temperature distribution (TD) was evaluated by using a non-destructive measurement method: thermal imaging (TI). The effects of both OT process parameters and sample properties on TD of thawed minced beef were determined. Thermal images were taken from the central cross-sectional area of a thawed sample. In the first part of the study, the effects of OT system parameters (voltage gradient; 10–13–16 V/cm and electrode type; E1:titanium foil electrode with a smooth surface, E2: needled-type titanium electrode, E3: titanium electrode with pyramid surface shaped) and sample shape (X: 13 × 4 × 3 cm3; Y: 13 × 6 × 2 cm3; Z: 13 cm height × 3.91 cm diameter) were analyzed in detail. The best thawing condition (electrode type E2 and sample shape Y) was determined by taking into account of thawing time and TD properties obtained from a developed TI processing technique. In the second part of the study, the effects of OT process on TD properties of minced beef having different fat contents (2–10–18%) were compared with those of two different conventional thawing processes (stationary cold ambient + 4 °C -RT and under cold running water + 4 °C -WT). The percentage of thawed portions in central section was above 68% for OT and varied between 12 and 54% for CT. Rectangular-shaped samples had more homogeneous temperature distributions than cylindrical samples (p < 0.05). TI could be used to control the process by non-destructive monitoring of temperature during OT.

Fifteen sterilised glass jars were inoculated with 2, 5, 10, 20 cm3 of a homogenised bacterial mixture (109 CFU/cm3), then sterile agricultural soil and 60 µg of fluazifop-p-butyl (in liquid form) were added to each jar. Each week, filtrated water drained from bottles was analysed for fluazifop-p-butyl concentration, chemical oxygen demand (COD), biochemical oxygen demand (BOD5) and total organic carbon (TOC). Additionally, pH and dissolved oxygen concentration were monitored. The highest biodegradation rate was observed in the soil sample containing 20 cm3 of the culture media. In this media, fluazifop-p-butyl, COD, BOD5 and TOC removals were measured as 91, 83, 96 and 86%, respectively, at the end of the 2 months. The DO level was measured between 3 and 6 mg O2/dm3 in the first month for all cultures. An increase of pH was recorded during the first month and after this time a pH decrease was noted.
