- MakaleAçık Erişim2026Scopus SJRQ1Natural propolis-based coatings as an effective strategy to control microbial growth and quality losses of kiwifruit during cold storage
Ozturk, Burhan; Gun, Sefa; Erturk, Omer; Aglar, Erdal; Yıldız, Kenan; Ozturk, Ahmet
Background: this study investigated the effects of ethanol-extracted propolis applications on the quality characteristics, microbial growth, and microstructural changes of kiwifruit (Actinidia deliciosa) during cold storage. Four different application groups were created: control, 70% ethanol application (ETH), 3% propolis coating (PRO1), and 6% propolis coating (PRO2). After dip coating, the fruits were stored for 150 days at 0 ± 0.5 °C and 90 ± 5% relative humidity, and analyses were performed on days 0, 30, 60, 90, 120 and 150. During storage, weight loss, respiration rate, fruit firmness, color, soluble solids content (SSC), titratable acidity (TA), vitamin C, total phenolics, total flavonoids, antioxidant activity (DPPH and FRAP assays), individual phenolic compounds, and microbial growth were determined in fruit samples. In addition, microstructural changes on the fruit surface were examined using scanning electron microscopy (SEM), and the elemental surface composition was determined using energy dispersive X-ray spectroscopy (EDX). Results: propolis coating applications maintained the quality characteristics of kiwifruit during storage. In particular, PRO1 and PRO2 reduced weight loss and respiration rate, better preserved fruit firmness, and maintained more stable color parameters. Propolis coatings also contributed to the preservation of ascorbic acid, total phenolic compounds, and total flavonoids, ensuring that antioxidant activity remained at higher levels throughout the storage period. Microbiological analyses showed that propolis coatings markedly reduced total bacterial counts on the kiwifruit surface, indicating their potential to limit microbial contamination during cold storage. SEM images showed that propolis coatings formed a homogeneous film layer on the fruit surface and limited microbial colonization by sealing surface pores. EDX analyses showed treatment-dependent changes in the surface elemental composition of kiwifruit peel, whereas SEM observations confirmed the formation of a continuous propolis-derived surface layer. Conclusions: overall, ethanol-extracted propolis coatings reduced total bacterial counts and quality losses in kiwifruit during cold storage and may serve as an effective natural preservative for extending cold-storage life. - MakaleYalnız künye2026Scopus SJRQ1Feeding problems in Turkish children with down syndrome and parental quality of life: A cross-sectional study
Okyar, Ferit; Kemer, Duygu
Background Children with Down syndrome (DS) often have feeding problems, which may negatively affect the quality of life (QoL) of their parents. This study aimed to identify feeding problems in children with DS and to examine the relationship between these feeding problems and parental QoL. Methods This cross-sectional study included 105 parents of children aged 10–18 years with DS in Turkey. Data were collected through face-to-face interviews using the Screening Tool of Feeding Problems (STEP) and the SF-36 Health Survey (SF-36). Results This study indicated that the mean STEP scale scores were below the average level across all frequency × severity subscales. Parents' mean scores on the SF-36 QoL scale were above the reference mean (x̄ = 50.00) for the physical functioning, vitality, mental health, social functioning, pain, and general health perception subscales, whereas scores for the physical role limitation and emotional role limitation subscales were below the reference mean. In this study, a moderate negative correlation was found between STEP subscale scores and parents' mean SF-36 subscale scores ( p ≤ 0.05). Conclusions In this study, a significant negative correlation was found between the STEP subscale scores and the parents' mean SF-36 subscale scores. Implications to practice: Routine feeding assessments using the STEP scale should be conducted for children with DS, and nurse-led parent education programs addressing feeding problems should be implemented.
- MakaleAçık Erişim2026Scopus SJRQ1Pomological and Biochemical Characterization of Autochthonous Grape Varieties Grown in Türkiye
Karasu, Yakup; Dogan, Adnan; Aykut, Semih; Ozturk, Burhan; Aglar, Erdal
Grapevine (Vitis vinifera L.) is an important fruit crop with considerable morphological and biochemical diversity, and autochthonous genotypes represent valuable genetic resources for breeding and conservation programs. Many local varieties remain underexplored in terms of pomological and antioxidant traits. Eighteen indigenous grape genotypes collected from Muş province (Eastern Anatolia, Türkiye) were evaluated using morphological and biochemical parameters, including berry traits, phenolic composition, vitamin C, and antioxidant activity. Multivariate analyses including PCA, HCA, and Pearson correlation were performed to classify genotypes and determine trait relationships. The first two PCA components explained 51.9% of the total variation. Antioxidant-related traits mainly contributed to PC1, whereas berry size and anthocyanin content influenced PC2. HCA grouped the genotypes into distinct clusters according to antioxidant capacity and pomological characteristics. Correlation analysis showed significant positive relationships among antioxidant-related parameters. Berry size traits were positively correlated with each other, but negatively associated with seed number and skin thickness. The combined use of pomological, biochemical, and multivariate analyses proved useful for genotype classification. The identification of antioxidant-rich genotypes may support future breeding and conservation studies. The results highlight the importance of indigenous grape germplasm for sustainable viticulture.

- MakaleAçık Erişim2025Milk Production Curves Obtained from Cows Raised in Türkiye According to Years and Determination of Production Differences with the Help of Cluster Analysis and Friedman Test
Çimen, Murat; Güven, Alper
In the study, cluster analysis and Friedman tests were used to create curves for cow milk yields in Türkiye between 2010-2023 and to determine yield differences. For this purpose, milk yield records obtained from TUIK for the years in question were used. Since data before 2010 could not be accessed, 2010 was taken as the starting date. When the figures obtained in the study are examined, it is striking that the years generally show similar curves. These curves generally show a decrease from January to February, then an increase until May. Milk yield values, which reach their peak in May, decrease again until November. After this month, a new increase is noted in December. The months showing maximum and minimum values in the graphs of 2016 and 2017 are different. Therefore, different curves were obtained for these years compared to other years. When the curves of all years, cluster analysis and Friedman test results are examined in general, it can be said that the highest production was determined in May and the lowest production in November. The reason for these differences should be investigated for the years 2016 and 2017, when different curve results were obtained. The findings of this study are important in terms of providing preliminary information for those who will conduct model studies on milk production in our country. In addition to the evaluation of curve graphs, it has been seen from the research findings that different statistical techniques such as cluster analysis and Friedman test give effective results in this type of data. Both cluster analysis and Friedman test methods are test methods that can be used safely in new studies where curve graphs will be made.

- MakaleAçık Erişim2025Comparison of Secondary Models for Modelling the Growth of Salmonella in Leafy Greens
Omaç, Basrı
This study evaluated the performance of three mathematical models—the Ratkowsky square-root, Arrhenius-type, and Cardinal models—in describing the temperature-dependent growth of Salmonella in leafy greens. Therefore, data on the maximum growth rate (μmax) of Salmonella enterica in leafy greens under different temperature conditions were collected from peer-reviewed scientific publications available in databases. The Integrated Pathogen Modeling Program (IPMP) software was then used for modelling and analysis. The results indicated that the sub-optimal Ratkowsky model most accurately captured growth rates below the organism’s optimum temperature, with parameters a=0.02 and Tmin=7.3°C estimated with high precision. In contrast, the model’s supra-optimal parameters were weakly constrained due to limited high-temperature data. Despite achieving strong explanatory power (R2=0.90), the Arrhenius-type and Cardinal models had significant parameter uncertainty over the whole temperature range, which limited their usefulness. These findings support the use of simpler, empirically grounded models in predictive microbiology when thermal data are incomplete. Future research should prioritize gathering data at higher temperatures to better characterize growth decline in the supra-optimal range.
- MakaleAçık Erişim2025Determination of Suitable Drying Model and Energy Efficiency of Mixed Culture Microalgal Biomass by Infrared Drying
Yoğurtçu, Hakan; Kalender, Mehmet
In this study, a modeling approach using infrared (IR) drying data of mixed-culture algae, an energy efficiency analysis of the drying process, and some surface proper-ties of the dried product were presented. New model equations derived from com-monly known drying models were applied to experimental data obtained from drying microalgal biomass at various temperatures ranging from 5 to 105 °C. Among these, the DM13 equation, based on the Newton model, best represented the drying behav-ior. The specific moisture extraction rate (SMER) and moisture extraction rate (MER) increased with higher drying temperatures, while, as expected, the specific energy consumption (SEC) decreased. According to the energy efficiency analysis, the IR drying method can be considered suitable for drying microalgal biomass. FT-IR re-sults indicated characteristic green algae peaks attributed to components such as carbohydrates, proteins, and cellulose–fatty acids. Peaks at 2900 cm⁻¹ and 3386 cm⁻¹ decreased with increasing drying temperature and disappeared at 105 °C. SEM imag-es showed that microalgal cells experienced shrinkage at 60 °C. Furthermore, while dried microalgal biomass exhibited a porous structure at 50 °C and 60 °C, pores were almost absent at 70 °C and 105 °C.
- MakaleAçık Erişim2025Molecular Identification of Anaerobic Gut Fungi Isolated from Mountain Goats
Kar, Bülent; Elinç, Cemal
Anaerobic Gut Fungi (AGF) are found in the Neocallimastigomycota phylum, and it is known that these fungi play an important role, especially in the digestive system of herbivores, as they are the main colonies in the consumption of feed. AGFs provide digestion by breaking down plant tissues with the help of lignocellulosic enzymes they secrete. These enzymes have also been used in the food and feed industry in recent years. In this respect, fungi isolated and identified from different ruminant animals are valuable. In this study, fungi were isolated from mountain goats living in the wild in the Tunceli region and identified morphologically and molecularly. The ITS region of ap-proximately 1500 bp was used in molecular identification. It was determined that 9 isolated fungi belonged to the genera Orpinomyces sp. (AGF-5), Feramyces sp. (AGF-8,10) and Neocallimastix sp. (AGF-1,2,3,4,7,11). Further studies are needed to determine the microbial population in wild ruminant animals.

İncele - MakaleAçık Erişim2025Macroeconomic determinants of food inflation in Türkiye: Empirical evidence from RALS-based time series analysis
Sarı, Sacit
This study aims to analyse the macroeconomic determinants of food price inflation in Türkiye using monthly data for the period 2015:01–2025:03. Fluctuations in food prices have significant impacts, particularly on the quality of life and food security of low-income households. In this context, food price inflation is used as the dependent variable. In contrast, the agricultural input price index, commercial loan interest rate, exchange rate, and oil prices are employed as explanatory variables. The stationarity properties of the series are examined through the Zivot-Andrews test and the RALS- LM test with structural breaks. The presence of a long-run cointegration relationship among the variables is tested using the RALS-EG test, and long-run coefficients are obtained via the DOLS method, which addresses endogeneity and serial correlation by augmenting the levels equation with leads and lags of first differences. Empirical findings suggest that agricultural input prices, interest rates, and exchange rates have a positive and significant impact on food inflation. Based on the results, reducing agricultural production costs, expanding the availability of low-interest farm loans, and effectively managing energy subsidies are critical to controlling food inflation. Erol, Nida Demirtaş
Canned and pouched tuna products are available in the markets in different liquid media such as brine, different oils and sauces. Limited information is provided about the pouched tuna products in different liquid media available in the Turkish market and the differences between them. The main purpose of this study is to evaluate the differences between two different tuna packaging methods using different packaging media. The pH values of CW (canned tuna in water) and PW (pouched tuna in water) were found to be lower than the others ((CO (canned tuna in olive oil), CS (canned tuna in sunflower oil), PO (pouched tuna in olive oil,) PS (pouched in sunflower oil)). It was observed that the TBA values of all groups were below the limits of developing objectionable odor/taste. The n-6/n-3 ratio was determined to be quite high in CS and PS. On the other hand, higher eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) contents were found in CW and PW compared to the others (CO, CS, PO, PS). It was determined that the tuna products were safe according to the heavy metal contents of arsenic, mercury, lead and cadmium levels. The L* values of all canned tuna (CO, CS, CW) were found to be significantly higher than those of pouched tuna (PO, PS, PW). The b* values of both CW and PW was found to be lower than the other groups. CW had the lowest overall quality, color and taste scores compared to the others. In this regard, pouched tuna products, especially PW, were recommended for health reasons.

- MakaleAçık Erişim2025Application of GIS in Flood Risk Analysis and Mitigation Strategies: The Case of Uluova and İkitepe Streams
Korkmaz, Meral; Uymaz, Muhammed
In recent years, the frequency and severity of floods have increased significantly due to the effects of global climate change, leading to serious economic and social losses, particularly in agricultural production areas. Floods not only damage cultivated lands but also negatively affect the livelihoods and socio-economic structures of local communities. This situation necessitates accurate identification of flood risk in agricultural areas and timely implementation of appropriate mitigation measures. In this study, flood risk was investigated in agricultural lands surrounding the Uluova Stream located between Doğankuş, Karşıbağ, and the Keban Dam and the İkitepe Stream, which flows through the center of Mollakendi in Elazığ Province, Türkiye. These areas are characterized by intensive agricultural activities. Using Geographic Information Systems (GIS), seven key parameters distance to streams, land use, aspect, slope, soil structure, precipitation, and geological features were analyzed, and corresponding thematic maps were generated. Flood risk levels were determined through spatial analysis and classification of these parameters using ArcGIS software. Based on the results, areas with high flood risk were identified, and both structural and non-structural mitigation measures were proposed for these zones. The findings offer valuable insights to support sustainable agricultural production and rural development by minimizing potential flood damages and reducing associated economic risks in the region.

The fertilization and subsequently embryo and larvae development are linked to gamete quality and FA (fatty acid) content is one of the specific factors affecting egg or sperm quality. Hence, FA profile of gametes (egg and sperm) was documented in brook trout (Salvelinus fontinalis) under cultivation. FAs were detected and measured using gas chromatography. These results indicated that a total of 26 and 22 FAs were determined in egg and sperm, respectively. The levels of PUFAs were determined in nearly identical quantities in both egg (47.57%) and sperm (47.53%). DHA (Docosahexaenoic acid), LA (Linoleic acid), EPA (Eicosapentaenoic acid) and ARA (Arachidonic acid) were predominant PUFAs for egg and sperm. Interestingly, vaccenic acid (C18:1 n-11) (24.07%) was major FAs in egg. In conclusion, the analysis of fatty acids in broodstock gametes contributes valuable insights into the dietary requirements necessary for effective aquaculture breeding programs.

In this study, a comparison of traditional growth methods (lengthweight relationships and von Bertalanffy growth function) with artificial neural networks in growth models was carried out in the growth of 783 specimens of Capoeta umbla from the Munzur River, Turkey from September 2019 to May 2021. The lengthweight relationships of C. umbla W = 0.0085L3.013 R2=0.943 was determined for all individuals. The ages of the specimens were from 0 to 11 years old. The von Bertalanffy growth function was Lt = 46.15 [1-e-0.139 (t + 2.57)] and Wt = 856.32 [1-e-0.139 (t + 2.57)]3.013 for all individuals. Ф’ value was 2.471 all individuals. The training stopped and the best validation performance was fixed at 8.1473 × 10-5 at epoch 42. The validation checks were reached as 6, at epoch 48 and the gradient = 5.6566 × 10-5, at epoch 48. The target output R value was 0.98584 for training, 0.98969 for validation, 0.98757 for testing and 0.9868 for all. The calculated MAPE values were 0.140 and 0.578 for artificial neural networks, 1.168 and 2.726 for length–weight relationships, 5.721 and 4.013 for von Bertalanffy growth function, respectively. The calculated SSE values for length and weight were 0.0128 and 30.864 for artificial neural networks, 1.3985 and 350.786 for length–weight relationships. The results of the present show that artificial neural networks can be superior estimators than length–weight relationships and von Bertalanffy growth function. Therefore, artificial neural networks models are an effective tool to describe body weight and length in fish.
